The Grassmarket is set to get a brewery with the opening of Cold Town House in the former Robertson Memorial Church after a £4 million investment by Signature Pubs, which will reignite a tradition dating back to the 16th century in the Grassmarket,
The interior has been transformed with an open pit fire, restaurant and stunning rooftop terrace along with most importantly 500l beer tanks that house the Cold Town Beer brewed onsite.
As well as fresh beer visitors can sample eat authentic artisan stone baked Neapolitan pizza which will be baked to perfection in a pizza oven custom-made in Naples. The dough is fermented using Cold Town Beer for 24 hours creating a light airy pizza base. There is an all day dining menu using locally sourced dishes, including vegetarian and vegan options.
