Stuart Ralston and Jade Johnston are set to launch their newest venture, tipo, on Hanover Street in March 2023. Open for lunch and dinner seven days a week, tipo will be the latest addition to Ralston‘s impressive restaurant portfolio, which includes the Top 100 National Restaurant Aizle and the Michelin Bib–awarded Noto.
Named after the highest grade of Italian flour used for making pasta, tipo will be a relaxed eatery offering small plates with a spotlight on the restaurant‘s speciality ingredients like fresh pasta, cured and aged charcuterie, alongside cocktails and boutique wines from artisanal, family-run vineyards.
Stuart and Jade have finally realised their dream of owning a restaurant! Scott, Stuart’s brother and former Executive Chef of Compass Group Edinburgh, is the head chef. The restaurant has a warm, inviting atmosphere, with natural wood decor, a single-level setup, and bar seating for single diners. Stuart expressed his excitement for the new eatery, “We’ve discussed this restaurant for a long time, and we finally found the ideal spot. We want our customers to experience a casual neighbourhood restaurant atmosphere, with simple pastas, dishes to share, vegetables cooked in the European style, and artisanal wines.”
In 2014, Stuart opened Aizle, a restaurant that offers a unique dining experience with no traditional menu – guests are only able to partake in a six–course tasting menu that is dictated by the availability of seasonal ingredients. Five years later, Stuart opened Noto, which is an all–day dining restaurant with an international menu featuring a strong Asian influence.
